Tomato masala curry | Thakkali masala kuzhambu

Ingredients
- Tomato– 2 [chopped]
- Onion – 1 [sliced]
- Ginger & garlic paste – 1 tbsp
- Green chilli -1 [slit length wise or chopped]
- Curry leaves – 1 spring
- Turmeric Powder – ¼ tsp
- Red Chilli Powder – 1 tsp
- Cumin Powder – ¼ tsp
- Cumin seeds – ½ tbsp
- Coriander Powder – ½ tbsp
- Garam Masala Powder – 1 tsp
- Mustard seeds – ½ tbsp
- Cinnamon Stick – ½ stick
- Cloves – 2
- Sugar a pinch
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Method
- Heat oil in a pan then add cinnamon stick, cloves, & mustard seeds. Once it’s spluttered add cumin seeds & curry leaevs sauté.
- Add onion sauté till soft.
- Add green chilli, ginger & garlic paste sauté well.
- Add turmeric powder, red chilli powder, coriander powder, cumin powder & garam masala powder sauté well.
- Add Tomato sauté well then add salt & enough water [¼ cup] cook till raw smell out & thickens.
- When boiling add sugar cook for 2 min then cut off heat, Serve hot with chapathi, dosa or rice
