Potato kurma | Aloo kurma-How to make-step by step photos

Ingredients
- Potato[Aloo] - 3 to 4
- Small onion [Shallots, sambar onion] – 4 [chopped]
- Curry leaves – 1 spring
- Turmeric powder – ¼ tsp
- Red chilli powder –2 tsp
- Mustard seeds – 1 tbsp
- Urad dal – 1 tbsp
- Oil – 2 tbsp
- Salt to taste
- Water as needed
For roasting & grinding ingredients
- Coriander seeds – 1 tbsp
- Cumin seeds – ½ tbsp
- Fennel seeds – ½ tbsp
- Cloves – 2
- Cinnamon stick– ½ stick
- Bengal gram – ½ tbsp
- Urad dal – ½ tbsp
- Garlic – 2 cloves
- Ginger – 1 inch piece
- Tomato -2 [chopped]
- Small onion [Sambar onion, shallots] - 7
- Dry red chilli [Vara milagai] - 2
- Curry leaves – 1 spring
Method
- Heat oil in a pan then roast above all grinding ingredients & grind to fine paste with ¼ cup of water.
- Peel off the potato skin, cut into cubes then boil with turmeric, red chilli powder & salt.
- Heat oil in a pan then add mustard seeds & let it splutter. Then add urad dal sauté.
- Add curry leaves & sambar onion sauté till soft.
- Add boiled potato, red chilli powder, turmeric powder & salt sauté gently for 2 min.
- Add ground paste and salt mix well & let it boil.
- Then cut off heat & serve hot with rice.

Spices for roasting & grinding
For seasoning:-Mustard, chana dal, urad dal, salt, turmeric & red chilli powder
For roasting & grinding:- Tomato-2, onion-1, ginger & garlic
Heat oil, add all aromatic spices, roast
Add all roasted ingrdients
Add onion, gigner & garlic saute
Add tomato, saute till soft
Now its ready, cut off heat, let it cool
Put all roasted ingredients, finely grind
Boil potato with red chilli & turmeric powder
Heat oil, add mustard, chana dal & urad dal
Add curry leaves, onion
Add boiled potato, red chilli powder, turmeric powder & salt mix well
Add ground paste
add water, let it boil
Add coriander leaves, cut off heat, serve hot with rice, idli, dosa, paper roast, or uthappam
