Paneer badam gravy | Badaami paneer veg curry | Cottage cheese Almond Curry

Ingredients
- Paneer [Cottage Cheese] – 1 cup
- Almond [Badam]– 7
- Carrot – ¼ cup [Cut into strips]
- Capsicum – ¼ cup [Cut into strips]
- Green peas – ¼ cup [Fresh]
- Tomato – 3
- Onion – 1 [sliced]
- Ginger & Garlic paste – 1 tbsp
- Green chilli – 1
- Cumin seeds – ½ tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – 1 tsp
- Garam masala powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin powder- ½ tsp
- Pepper powder – ¼ tsp
- Kasoori methi – 1 tbsp
- Sugar – ¼ tsp
- Butter – 1 tbsp
- Oil – 2 tbsp
- Salt to taste
- Water as needed
For paneer marination [ingredients & Method]
- Thick Curd – ½ cup
- Ginger, garlic & green chilli paste – 1 tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Garam masala powder – 1 tsp
- Coriander powder – 1 tsp
- Cumin powder- ½ tsp
- Pepper powder – ¼ tsp
- Salt to taste
- Oil - for shallow fry
- Method:- Cut paneer in to cubes
- In a bowl add above ingredients mix well.
- Add paneer cubes & leave it for 1 hour in a fridge.
- Then shallow fry paneer cubes till crisp & golden brown.
Preparation Method For Gravy
- Wash and boil tomato then peel the skin off. Then put it in a mixer jar & finely grind.
- Put almonds in a mixer jar grind well then add water grind to smooth paste
- Heat oil in a pan fry onion till golden brown then let it cool & grind to smooth paste.
- Heat oil & butter in a pan add cumin seeds & let it splutter.
- Add carrot, capsicum & green peas sauté.
- Add ginger & garlic paste sauté.
- Add onion paste sauté.
- Add green chilli sauté.
- Add ground tomato puree, salt, turmeric & red chilli powder sauté till raw smell out. [Add water if required]
- Then add coriander, cumin, pepper powder mix well.
- Add almond paste mix well.
- Add garam masala powder mix well & let it cook.
- Add marinated & shallow fried paneer.
- Add sugar & & let it cook on low flame for 2 min.
- Finally add kasoori methi, Coriander leaves mix well then cut off heat.
- Garnish with butter & serve hot with rice, roti, chapathi & naan.
