Kathirikai poriyal | Brinjal stir-fry

Nei kathirikai poriyal is simple and delicious side dish for rice. This is made with my home garden nattu kathirikai with coconut, turmeric & red chilli powder.
Ingredients
- Kathirikai [eggplant, brinjal] - ¼ kg
- Sambar Onion – 5 to 6
- Garlic – 1 clove
- Green chilli – 1 chopped
- Curry leaves – 1 spring
- Coconut – 3 tbsp [Grated]
- Turmeric powder – ¼ tsp
- Red chili powder – ½ tsp
- Asafoetida - 1/4 tsp
- Mustard seeds - 1 tsp
- Chana dal - 1 tbsp
- Urad dal - 1/2 tbsp
- Salt to taste
- Ghee - 1 tbsp
- Groundnut oil – 2 tbsp
Preparation
- Heat iron casting pan add oil & ghee, add mustard seeds & let it splutter
- Add chana dal & urad dal saute for a min
- Add curry leaves, asafoetida, sambar onion, green chilli & garlic sauté till soft.
- Add coconut saute for a min.
- Add kathirikai, turmeric powder, red chilli powder sauté on medium-low flame till soft.
- Then cut off heat & serve hot with rice.
