Kovakkai[ Coccinia, Dondakaya, Ivy Gourd, Tindora] varuval is simple and instant side dish for rice or millets. Its is best for diabetes, Asthma & reduce blood sugar levels. If you are pregnant ask your doctor then use. You can use fresh or dried ivy gourd.
Ingredients
- Kovakkai[Tindora, Dondakaya] - ¼ kg
- Onion – 1 chopped
- Garlic – 1 clove
- Green chilli – 1 chopped
- Curry leaves – 1 spring
- Coconut – 3 tbsp [Grated]
- Turmeric powder – ¼ tsp
- Red chili powder – ½ tsp
- Garam masala powder – ½ tsp
- Asafoetida - 1/4 tsp
- Salt to taste
- Groundnut oil – 2 tbsp
Preparation
- Heat iron casting pan add oil, add mustard seeds & let it splutter
- Add curry leaves, asafoetida, onion, green chilli & garlic sauté till soft.
- Add coconut saute for a min.
- Add kovakkai, turmeric powder, red chilli powder sauté well.
- Add garam masala powder, saute on medium-low flame till soft.
- Then cut off heat & serve hot with rice.

Wash and slice
Sliced kovakkai ready
Heat 1.5 oil, add mustard, garlic, asafoetida, onion, curry leaves & green chilli
Add grated coconut, saute for a min
Add Kovakkai, saute for a min
Add salt
Add red chilli powder and turmeric powder
Saute for for 3 min
Add garam masala powder, saute till soft on medium to low flame
Now itsrady, cut off heat
Transfer to a bowl serve hot with rice or chapathi
