Carrot soup-How to make-Step by step photos

This is simple and healthy evening/ morning soup for kids. Creamy and thick soup with toasted bread and crushed pepper. Its is also simple and complete breakfast recipe. Dont have time for breakfast ? Just saute onion, garlic, carrot, potato in a broad pan with butter/oil then cook with veg stock/water, puree, add toasted bread cubes then serve hot.
You can add corn flour mixture, fresh cream, cheese or milk for extra falvour and thickness.
If you dont like milk add coconut milk, almond milk, cashew milk or oats milk.
Ingredients
- Carrot – 2
- Potato - 1
- Onion – 2 [sliced]
- Garlic – 4 cloves
- Pepper powder - 1 tsp
- Turmeric powder -1/2 tsp[optional]
- Salt to taste
- Butter - 2 tbsp
- Vegetable stock or water as required
- Bread- 1 or 2
Method
- Heat 1 tbsp butter in a pan add onion, garlic saute till soft
- Add pumpkin cubes, turmeric, red chilli powder & salt saute for 3 min
- Add water/ vegetable stock cook till soft
- Put cooked pumpkin in a mixer jar, blend till smooth
- Heat butter in the same pan, add ground pumpkin puree, coconut milk & salt let it boil for 3 min
- Finally add pepper powder or freshly ground pepper serve hot with toasted bread cubes

Peel off onion, potato or carrots
Roughly chop
Heat butter/oil, add onion, garlic
Add potato/carrot cubes
Add salt
Add turmeric powder [optional]
Saute for 3 min
Add vegetable stock or water
Cook till soft
Now its ready, cut off heat
Add sauted ingredients in a mixie jar, grind to fine puree
Creamy potato carrot puree ready
Heat pan add ground puree
Add salt
Add crushed pepper, let it boil for 3 min
Now its ready, cut off heat
Add toasted bread, serve hot
