Beetroot poriyal [stir fry]

Ingredients
- Beetroot -2 [cut into cubes]
- Onion – 1 [chopped]
- Coconut – ¼ cup [grated]
- Green chilli – 1 [sliced]
- Curry leaves – 1 spring
- Mustard seed – 1 tbsp
- Bengal gram – ½ tbsp
- Urad dal – ½ tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tbsp
- Oil – 2 tbsp
- Salt to taste
- Water as needed
Preparation
- Boil beetroot with salt.
- Heat pan with oil add mustard seed, Bengal gram, urad dal and onion sauté till soft.
- Add green chilli and curry leaves. Add turmeric powder and red chilli powder mix well.
- Then add boiled beetroot sauté well. Then add coconut mix well. Cut off heat & serve hot with rice
