Baingan pakora | Eggplant fritters-How to make-Step by step photos

Ingredients
- Baingan[Eggplant, Brinjal] - 2
- Besan [gram flour, kadalai maavu] – 1 cup
- Rice flour – 3 tbsp
- Red chilli powder – 1 tsp
- Turmeric powder- ¼ tsp
- Asafetida a pinch
- Oil - 1 tbsp
- Salt to taste
- Water as needed
- Oil – ¼ ltr [for frying]
Preparation Method
- Wash & slice eggplant
- Add gram flour, rice flour, salt, asafetida, red chilli & turmeric powder then add water mix well & make batter without lumps
- Add 1 tbsp of oil into gram flour batter for crispiness & fluffy
- Heat oil in a pan, dip eggplant slices in the prepared batter, drop it in oil, deep fry till crisp & golden brown both sides on medium hot oil
- Once its ready remove from oil, drain on absorbent paper & serve hot with tea or coffee.

Slice eggplant
Add gram flour, rice flour ,asafetida & salt mix well
Add red chilli, turmeric powder mix well
Add water make batter then add oil mix well.
Dip eggplant into the batter
Heat oil in a pan , drop eggplant
Deep fry eggplant till crisp and golden brown
Once its ready remove from oil

Eggplant fritter is ready serve hot with green chutney
