Vadagam puli kuzhambu | Vadagam tamarind curry

Ingredients
- Vadagam [urad dal & onion] – 3 tbsp
- Sambar onion – 4 [finely chopped]
- Dry red chilli - 1
- Curry leaves – 1 spring
- Mustard seeds- ½ tbsp
- Jaggery – 1 tbsp [Grated]
- Tamarind water – ½ cup [light]
- Bengal gram – ½ tsp
- Urad dal – ½ tsp
- Turmeric powder – ¼ tsp
- Red chilli powder – 4 tsp
- Garlic – 2 cloves [mashed]
- Oil – 1 tbsp
- Oil for deep frying
- Salt to taste
- Water as needed
Method
- Heat enough oil in a pan add urad dal vadagam deep fry till crisp.
- Soak tamarind for 5 min then squeeze & extract water
- Heat oil in pan add mustard & let it splutter
- Add Bengal gram, urad dal, curry leaves, garlic & onion sauté.
- Add tamarind water, turmeric powder & red chilli powder mix well & let it boil.
- Finally add jaggery & let it boil for a min then add fried vadagam & cut off heat
- Serve hot with rice
