Ingredients
- Thinai idli batter[Foxtail millet]– 2 cups
- Onion – 1 [chopped]
- Capsicum seeds– 3 tbsp
- Chana dal[bengal gram] - 1 tbsp
- Urad dal - 1 tbsp
- Mustard seeds - 1 tbsp
- Ginger - 1 tbsp[chopped]
- Green chilli - 2 tbsp[chopped]
- Curry leaves - 2 springs
- Coriander leaves - 2 springs
- Salt to taste
- Water as needed
Method
- Heat oil in a pan add mustard seeds, let it splutter then add bengal gram, urad dal fry.
- Add onion, capsicum, ginger,curry leaves, green chilli saute.
- Finally add coriander mix well.
- In a bowl, add thinai idli batter, sautéed ingredients & mix well.
- Heat paniyaram tawa (Iron casting tastes better than other material) & grease with oil then pour batter. Cover lid and cook for 2 min.
- Flip over and pour 1 tbsp of oil around the paniyaram then again cook for 2 min.
- Cut off heat. Then transfer to serving plate. Serve hot with coconut chutney

Thinai paniayram ingredients
Heat pan, add oil, chana dal, urad dal fry till light brown
Add gigner & green chilli
Add onion saute till soft
Add capsicum saute for 1 min
Add curry leaves & coriander leaves
Add seasoned ingredients
Batter is ready
Heat paniyaram tawa, pour 1 tbsp oil & batter
Fill all cavities
Cover lid, cook for 3 min
One side of paniyaram is ready
Flip over, cook for 3 min
Now its ready, cut off heat
Thinai arisi paniyaram ready, serve hot with chutney
