Ingredients
- Samai arisi idli batter– 2 cups
- Onion - 1
- Capsicum –3 tbsp
- Ginger - 1 tbsp[chopped]
- Green chilli - 2 [chopped]
- Curry leaves - 2 springs
- Coriander leaves - 2 springs
- Mustard seeds - 1 tbsp
- Bengal gram - 1 tbsp
- Urad dal - 1 tbsp
- Salt to taste
- Water as needed
Method
- Heat oil in a pan add mustard seeds, let it splutter then add bengal gram, urad dal fry.
- Add onion, capsicum, ginger,curry leaves, green chilli saute.
- Finally add coriander mix well.
- In a bowl, add samai idli batter, sautéed ingredients & mix well.
- Heat paniyaram tawa (Iron casting tastes better than other material) & grease with oil then pour batter. Cover lid and cook for 2 min.
- Flip over and pour 1 tbsp of oil around the paniyaram then again cook for 2 min.
- Cut off heat. Then transfer to serving plate. Serve hot with coconut chutney

Heat oil, add Mustard seeds
Add bengal gram & urad dal
Add onion, capsicum, gigner & green chilli saute for a min
Add curry leaves & coriander leaves
Add seasoned ingredients
Heat iron paniyaram pan, add oil
Pour batter
Fill all cavity with paniyaram batter
Cover lid cook for 3 min
After 3 min
Flip over & cook another side for 2 min
Samai paniyaram ready, remove it from pan
