How to make Raw jackfruit biryani video
Ingredients
- Basmati rice – 2 cups
- Raw jackfruit[palakai] – 1/2[small]
- Tomato -2 [chopped]
- Onion – 1 [sliced]
- Fennel seeds – 1 tbsp
- Green cardamom - 3
- Cinnamon stick- 1
- Cloves - 4
- Bay leaves - 1
- Star anise - 1
- Mace -1
- Red chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Garam masala powder – 1 tbsp
- Salt to taste
- Ghee – 2 tbsp
- Oil – 2 tbsp
- Water –3 cups
For grinding[Ingredients]
- Green chilli -1
- Ginger - 1 inch piece
- Garlic - 5 cloves
- Mint leaves - 2 springs
- Coriander leaves - 2 springs
- Put all these ingredients in a mixer jar, coarsely grind
Preparation Method
- Peel off the raw jackfruit skin, cut into cubes
- Boil water, add raw jackfruit cubes, turmeric powder & red chilli powder cook till soft or 3/4th.
- Wash & soak basmati rice for ½ an hour.
- Heat oil & ghee in a pressure cooker, Add green cardamom, fennel seeds, cinnamon stick, mace, cloves, bay leaves, star anise, stone flower sauté.
- Then add onion sauté till light brown
- Add ground paste saute.
- Add tomato sauté, garam masala, red chilli & turmeric powder saute till soft.
- Then add boiled raw jackfruit saute.
- Add basmati rice & salt mix well.
- Then add water, mix well, cover it & cook for 3 whistles in pressure cooker or cook for 10 mn in open pan.
- Sprinkle mint leaves & serve hot with salna kurma and raitha.
How to make Raw jackfruit biryani - Stepwise pictures
Add 2 cups of basmati rice
Wash 2 to 3 times
Soak it for 10 min
Take baby raw jackfruit
Slice
Remove outter skin, chop
Put it in turmeric added water
Add red chilli powder
Boil till 3/4 th
Now its ready, drain water
Add ginger, garlic, green chilli, coriander, mint leaves
Coarsely grind
Heat oil, ghee, add spices
Add onion saute till light brown
Add ground mixture
Add tomato
Add red chilli, turmeric, garam masala powder
Add boiled jackfruit
Add basmathi rice
Mix well
Add water, salt
Boil
Cook for 4 to 5 whistles
After 4 whistle, remove steam
Add mint leaves
Gently mix
Jackfruit biryani ready
Serve hot with raita
