Ingredients
- Pavakkai [ Bitter gourd, karela ]- 1 [wash & thinly slice]
- Besan [gram flour, kadalai maavu] – ¼ cup
- Rice flour – 2 tbsp
- Red chilli powder – 1 tsp
- Turmeric powder- ¼ tsp
- Garam masala powder - 1 tsp
- Ginger garlic paste - 1 tbsp [optional]
- pepper powder - ¼ tsp
- Asafetida a pinch
- Salt to taste
- Water as needed
- Oil – ¼ ltr [for frying]
Preparation
- Peel of the bitter gourd skin, wash & thinly slice.
- Heat 12 tbsp oil in a pan add sliced bitter gourd saute then add turmeric & red chilli powder saute.
- Add water cook 3/4 th. Then cut off heat add lemon juice mix well & leave it for 10 min.
- Take a bowl add gram flour, rice flour, salt, asafetida, gigner, garlic paste, garam masala, red chilli & turmeric powder then add water mix well (bajji batter consistency).
- Heat enough oil in a pan, dip bitter gourd slices in the batter and deep fry on medium hot oil till crisp & golden brown.
- Serve hot with Tomato sauce, Green Chutney, Schezwan chutney
