Ingredients for batter

  • Gram flour[Kadalai maavu, besan]– 1/4 cup
  • Curd– 1 cup
  • Red chilli powder – ½ tbsp
  • Turmeric powder – ½ tsp
  • Garam masala - 1/ tbsp
  • Salt to taste
  • Water as needed

Ingredients for Leftover semiya pakora

  • Leftover semiya upma or fresh boiled semiya– 1/4 cup
  • Red chilli powder – ½ tbsp
  • Turmeric powder – ½ tsp
  • Gram flour - 3 tbsp
  • Rice flour - 2 tbsp
  • Salt to taste
  • Oil for deep frying

Ingredients for seasoning

  • Onion – 1 [sliced]
  • Ginger– 1 tbsp
  • Garlic – 1 tbsp
  • Green chilli – 1 or 2
  • Curry leaves – 1 spring
  • Coriander leaves – 2 springs [chopped]
  • Mustard seeds – 1 tbsp
  • Cumin seeds – 1 tbsp
  • Hing– 1/4 tsp
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

Method

  • In a bowl add gram flour, red chilli powder, turmeric powder, garam masala, salt, curd and water mix well without lumps.
  • In a bowl add leftover semiya upma, red chilli powder ,turmeric, salt, gram flour & rice flour mix well.
  • Heat oil in a pan, drop semiya pakoda mixture, deepfry till crisp and golden brown.
  • Heat oil in a pan add mustard seeds, cumin seeds & let it splutter.
  • Then add hing, curry leaves, onion, green chilli & garlic sauté till soft.
  • Add gram flour curd mixture, mix well & let it boil for 5 min or boil till raw smell out. [Add water if required]
  • Once its ready, add coriander leaves, cut off heat.
  • Add fried semiya pakoda & Serve hot with idli, dosa or uthappam

Notes and variations

  • You can add onion pakoda, masala vada, urad dal vada, adai mixture vada, bread vada/pakora, gram flour pakoda, spinach, methi etc.
  • You can add dry red chilli & grated coconut.
  • You can add ground cumin, ginger, green chilli & coconut paste[For flavour]
  • You can add kasoori methi / 1 tbsp sugar
