Ingredients
- Rice flour [Arisi maavu]– 1 cup
- Beetroot juice– 1/2 cup
- Carrot juice– 1/2 cup
- Spinach juice– 1/2 cup
- Turmeric powder– 1 tsp
- Coconut – ¼ cup [grated]
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Green chilli – 1 [chopped]
- Red chilli powder – 1 tbsp
- Mustard seeds -1 tbsp
- Urad dal - ½ tbsp
- Salt to taste
- Oil – 1 tbsp
- Gingelly oil – 1 tbsp
- Water as needed
Method
- For white mini kolukattai:- In a bowl, add rice flour & water then make idli batter consistency without lumps.
- Heat pan, pour batter and stir continuously till mixture becomes chapatti soft dough consistency.
- Then pour 1 tbsp of ginelly oil over the dough.
- Divide the dough into equal size balls [small gooseberry size].
- For red color kolukattai:- Add beetroot juice instead of water. Repeat the same procedure.
- For green kolukattai:- Add spinach juice, rice flour, salt in a bowl, make batter, then repeat the same procedure
- For orange & yellow:- Add turmeric & carrot juice.
- Heat idli cooker with water & let it boil.
- Then grease idly plates with oil, Place prepared balls & place it in boiling water, cover lid and steam it for 5 to 8 min.
- Heat oil in a pan, add mustard seeds & let it splutter. Then add urad dal sauté well
- Add green chilli & curry leaves sauté gently.
- Then add grated coconut & red chilli powder sauté gently.
- Add steamed balls sauté well.
- Finally add chopped coriander leaves & coconut then cut off heat serve hot
