Beetroot soup is perfect, instant & healthy winter soup for kids. Beetroot is sweet,bright colour, juicy root vegetable. Beetroot contains lots of health benefits & folic acid.
It is one of the best natural immunity boosters & has anti-inflammatory benefits.
It helps to reduce/control blood pressure level, improve stamina & boost energy levels.
It contains potassium, minerals, fibre, iron, calcium, vitamins, zinc, & antioxidants.
It will reduce/ prevent cancer.
It has anti-aging properties.
This will help to reduce weight /maintain weight.
This is good for liver, eyes & brain.
It cleanses the blood, liver & stomach.
It helps to improve digestion & natural remedy for anaemia
You can roast, boil, steam or make juice using beetroot.
I didn’t use potato in this soup. If you like potato you can add for super creamy texture. You can use fresh cream, yogurt or coconut. You can use lemon juice, green onions, sautéed vegetables & coriander leaves.
Perfect beetroot soup
Ingredients
- Beetroot – 1
- Onion – 1[sliced]
- Garlic – 4 cloves
- Pepper powder - 1 tsp
- Turmeric powder -1/2 tsp[optional]
- Salt to taste
- Butter - 2 tbsp
- Bay leaf [Brinji ilai] - 1
- Vegetable stock or water as required
- Bread- 1 or 2
Method
- Heat 1 tbsp butter in a pan add onion, garlic saute till soft
- Add pumpkin cubes, turmeric, red chilli powder & salt saute for 3 min
- Add water/ vegetable stock cook till soft
- Put cooked pumpkin in a mixer jar, blend till smooth
- Heat butter in the same pan, add ground pumpkin puree, coconut milk & salt let it boil for 3 min
- Finally add pepper powder or freshly ground pepper serve hot with toasted bread cubes
Tips and variations
- You can add cauliflower & potato for another variation.
- You can add cheese / milk
- For lentil beetroot soup-Add toor dal/ moong dal/rajma beans etc
- You can add all purpose flour / rice flour or gram flour for thickness.
- For pasta beetroot soup add ditalini pasta, Tubetti, Casarecce, Conchiglie, Orecchiette,anellini, elbows, dischi volanti pasta or Radiatori pasta

How to make Beetroot soup-Step by step photos
Beetroot soup ingredients
Roughly slice
Heat 1 tbsp oil, add bay leaf, garlic, onion
Add salt, saute till soft
Add beetroot cubes
Add turmeric powder [optional]
In a bowl add 1.5 tbsp corn flour
Add water, mix well
Add water / vegetable stock, let it boil till soft
Now its ready, cut off heat
Put it in a mixer jar, finely ground
Beetroot mixture ready
Heat pan add 1 tbsp butter
Add ground puree
Add corn flour mixture, let it boil
Add crushed peppercorns
