Ingredients

  • Okra [Vendakkai, bhindi, Lady's finger] – ¼ kg
  • Coconut – 3 tbsp [grated]
  • Onion – 2 [finely chopped]
  • Garlic – 1 [finely chopped]
  • Green chilli – 1 [finely chopped]
  • Curry leaves – 1 spring [finely chopped]
  • Coriander leaves – 2 springs [finely chopped]
  • Idli podi - 2 tbsp
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

Preparation

  • Wash and cut the edges of okra & slit length wise. Then sprinkle salt.
  • Heat oil in a pan then add onion, garlic sauté till light brown then add green chilli, curry leaves.
  • Then add coconut, salt, idli podi & coriander leaves mix well. Then cut off heat. Let it cool [2 min].
  • Then stuff this mixture into okra then cover.
  • Heat oil in a pan then place stuffed okra let it cook for 2 min then sprinkle small amount of water then cover lid & cook till soft.
  • Then cut off heat serve hot with rice.

Tip

  • You can use, capsicum, egg plant, onion,Snake gourd & bitter gourd for stuffing
