Stuffed bhindi | Stuffed okra | Vendakkai stuffing-lady's finger recipe

Ingredients
- Okra [Vendakkai, bhindi, Lady's finger] – ¼ kg
- Coconut – 3 tbsp [grated]
- Onion – 2 [finely chopped]
- Garlic – 1 [finely chopped]
- Green chilli – 1 [finely chopped]
- Curry leaves – 1 spring [finely chopped]
- Coriander leaves – 2 springs [finely chopped]
- Idli podi - 2 tbsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Preparation
- Wash and cut the edges of okra & slit length wise. Then sprinkle salt.
- Heat oil in a pan then add onion, garlic sauté till light brown then add green chilli, curry leaves.
- Then add coconut, salt, idli podi & coriander leaves mix well. Then cut off heat. Let it cool [2 min].
- Then stuff this mixture into okra then cover.
- Heat oil in a pan then place stuffed okra let it cook for 2 min then sprinkle small amount of water then cover lid & cook till soft.
- Then cut off heat serve hot with rice.
Tip
- You can use, capsicum, egg plant, onion,Snake gourd & bitter gourd for stuffing
