Pista kulfi

Ingredients
- Pistachios – ¼ cup
- Almonds –¼ cup
- Sugar – ½ cup
- Honey – ¼ cup
- Milk – 4 cups or 1 ¼ liters
- Khoya / mawa – 3 tbsp [grated]
- Saffron a pinch
- Green cardamom powder - ½ tbsp [Optional]
Preparation
- Wash & soak almonds & pistachios for 1 hour then drain water.
- Peel off the almonds skin & coarsely grind with ¼ cup of milk.
- Heat milk in a pan & let it boil.
- Then add saffron mix well & stir continuously on low flame till the milk reduced by half.
- Add sugar, honey & ground mixture mix well & let it thickens. Then add green cardamom powder & cut off heat.
- Finally add Khoya mix well & let it cool.
- Then pour the mixture into kulfi moulds & place it in the freezer to set. [Apr 9 to 10 hours]
- Then unmould & serve immediately.
Tip
- For instant kulfi add sweet condensed milk [Milk maid] & khoya/mava
