Paneer corn fried rice-Simple and healthy lunch box recipe

Ingredients
- Basmati rice - 1 cup
- Corn kernels - 1/2 cup[boiled]
- Onion - 2 tbsp [fienly chopped]
- Spring onion - 2 springs [finely chopped]
- Paneer - 1/2 cup [cut into small cubes]
- Capsicum - ¼ cup [fienly chopped]
- Pepper powder [freshly ground] - 1 tbsp
- Tomato chilli sauce - 2 tbsp
- Soya sauce - 1 tbsp
- Green chilli - 1 chopped
- Garam masala -1 tbsp
- Garlic - 1 tbsp[finely chopped]
- Salt to taste
- Oil - 2 tbsp
For marinating paneer ingredients
- Ginger galic & green chilli paste - 2 tbsp
- Red chilli sauce - 1 tbsp
- Pepper powder [freshly ground] - 1 tsp
- Soya sauce - 1 tsp
- Garam masala -1 tbsp
- Salt to taste
- Corn flour - 2 tbsp
- Lemon juice - 1 tbsp
- In a bowl add paneer, above all ingredients, mix well & leave it for 15 min.
- Then shallow fry till cirsp.
Preparation
- Wash and soak basmati long grain for 30 min.
- Heat 7 cups of water in a pan, add 1 tbsp oil or ghee let it boil.
- Add basmathi rice & salt cook till 3/4 th. Then drain water, cover lid & leave it for 5 min.
- Then spread it on the plate let it cool.
- Heat pan with oil , add onion & garlic sauté till light brown then add green chilli sauté gently.
- Add corn kernels, green capsicum strips and sauté well for 3 min. Add dark soya sauce, tomato chilli saute sauté
- Add salt, garam masala mix well.
- Add shallow fried paneer & cooked basmati rice and mix well.
- Now fry on high flame for 2 minutes.
- Add chopped spring onions, freshly ground peppercorns mix well then serve hot with any manchurian
