Mangalore cucumber more kulambu-Step by step photos & video

Ingredients
- Mangalore cucumber[Southkayi] -1/2 or 1 cup
- Thick buttermilk (1/2 cup curd + 1 1/2 cups water)- 2 cups
- Turmeric powder- 1/4 tsp
- Ginger-1 inch piece
- Toor Dal- 1 tsp
- Rice -1 tsp
- Green Chillies- 2
- Coconut - 2 tbsp
- Cumin seeds - 1 tbsp
- Salt to taste
For Tempering
- Coconut oil/cooking oil- 1 tbsp
- Mustard seeds- 1/4 tsp
- Curry leaves- 1 spring
- Chana dal - 1 tbsp
- Urad dal - 1 tbsp
- Asafoetida- a pinch
Preparation
- Soak rice and Toor Dal together for 15 to 20 minutes.
- In a bowl add curd, turmeric & water beat well to make buttermilk, keep it aside.
- In a mixie jar add soaked dal, rice, cumin seeds, coconut, ginger, green chilli, finely grind
- Heat coconut oil in a pan, add mustard, chana dal, urad dal, hing, curry leaves, saute
- Add mangalore cucumber, salt, turmeric cook till soft
- Add ground mixture, buttermilk mixture cook for 5 min on low -medium flame
- Once its ready, serve hot with rice

Perfect mangalore cucumber buttermilk curry
In a bowl add 1 tsp rice
Add 1 tsp toor dal
Soak it for 20 min
20 min later, soaked rice & dal ready
In a mixie jar add soaked dal, coconut, green chilli, ginger, cumin seeds, finely grind
Ground mixtrue ready
Remove skin & seeds of southekayi
Cut into cubes
Cubed southekayi ready
Heat 2 tbsp oil in a pan
Add mustard seeds
Add chana dal, urad dal, curry leaves, hing
Add mangalore cucumber
Add turmeric powder, saute for 2 min
Add water, cook till soft
In a bowl add curd
Add turmeric powder
add water, make buttermilk
Now itsready, keep it aside
Add ground mixture
Add buttermilk
Cook for 3 min on low flame
Add turmeric & salt, cook for 2 min on medium flame
Now itsr eady, cut off heat
Transfer buttermilk curry to bowl
Serve hot with rice
Perfect yellow curry ready
