Kothavarangai poriyal | Cluster beans stir fry-How to make -step by step photos

Ingredients
- Kothavarangai [Cluster Beans, guar beans] - ¼ kg or 1 cup [wash & chop]
- Onion - 1 [chopped]
- Garlic -2 cloves[mshed]
- Curry leaves – 1 spring
- Green chilli - 1
- Asafotida[Hing, perungayam] - 1/4 tsp
- Coconut - 1/4 cup [grated]
- Bengal gram –1 tbsp
- Urad dal - 1/2 tbsp
- Turmeric powder – ¼ tsp
- Red chilli powder- 1 tbsp
- Mustard seeds – 1 tbsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Preparation
- Wash cluster beans[ kothavarangai], then fienly chop.
- Heat 2 tbsp oil in a pan add mustard seeds.
- Once it’s spluttered add bengal gram, urad dal & hing fry till light brown
- Add curry leaves, green chilli saute
- Add onion saute till soft
- Add coconut saute for a min
- Add cluster beans, salt, turmeric & red chilli powder sauté .
- Add water, cook till soft.
- Finally add remaining coconut, cut off heat & serve hot with rice

Heat 2 tbsp oil, add mustard, urad dal, chana dal, garlic, green chilli, onion, curry leaves
Add hing
Add salt, saute till soft
add coconut saute for 2 min
Add chopped cluster beans[Kothavarangai]
Add turmeric and red chilli powder
Saute for 3 min
Add water, cook till soft
Add salt
Now its ready, cut off heat
Kothavarangai poriyal ready, serve hot with rice
