French fries double fry method-How to make-Step by step photos & Video

Ingredients
- Potato - 2 [big]
- Corn flour - 2 tbsp
- Mixed herbs - 1 tsp
- Crushed pepper - 1/2 tsp
- Salt to taste
- Oil for deep frying
Preparation
- Wash & peel off the potato skin.
- Then slice[lengthwise], wash 3 to 4 times.
- Add sliced potato into cold water soak it for 5 min. Then drain water
- Boil water in a pan then put sliced potatoes, parboil for 3 min then drain water & put it in cold water to stop cooking.
- Place it on cotton cloth, wipe off extra moisture.
- Sprinkle corn flour mix well.
- Heat oil in a pan then add potato slices deep fry for 2 min on medium heat.
- Then remove from oil & place it in an absorbent paper for 2 min.
- Then again deep fry till crisp & light brown on hot oil.
- Once its ready, drain on absorbent paper serve hot with tomato sauce.
Tip
- You can add parboiled potato slices into a zip lock pouch place it in a refrigerator for about 4 to 5 hours or overnight then you can fry.
- Parboil is optional.
- You can use carrot, sweet potato, zucchini, eggplant, beetroot, raw banana or senai kizhangu for variations

Cut, wash and soak potato for 5 min
Boil for 3 min
Drain water completely
Add cold water, to stop cooking
Place it over the cotton cloth
Wipe off the extra moisture
Sprinkle corn flour[optional] mix well, Now its ready to fry
Heat oil, add potatoes, deep fry for 3 min on medium flame
Flip over fry
Remove it from oil
Drain on absorbent paper
Deep fry second time
Deep fry till crisp and light brown
Flip over fry
Now its ready,
Remove it from oil
Drain oil
Sprinkle salt
Add mixed herbs
Toss it, serve immediately
