Butterscotch ice cream is simple, tasty and instant homemade freezer dessert. No praline procedure required. We have added simple trick for instant praline from scratch. This ice cream contains only 3 steps. 1. Butterscotch sauce:- Sugar/ jaggery/ brown sugar, butter, fresh cream. If you are a vegan add almond milk, coconut cream or cashew milk. 2. Praline:- Caramalize sugar, add roasted cashews, make chikki. 3. Milk & heavy cream mixture. Combine these 3 steps we will get creamy reataurant style butterscotch ice cream.
Ingredients
- Milk - 1/2 ltr [350 ml]
- Sugar - 1/4 cup
- Sweet condensde milk - 1/4 cup
- Milk powder- 2 tbsp
- Corn flour - 2 tbsp
- Vanilla essence - 1/2 tsp
- Praline - 1/4 cup [Peanut/ cashew chikki]
Ingredients for butterscotch sauce
- Sugar - 1/2 cup
- butter - 2 tbsp
- Fresh cream - 1/4 cup
- Heat pan, add sugar and 2 tbsp water, let it caramalize.
- Add butter, cream cook for 1 min.Then keep it aside
Ingredients for Praline
- Sugar - 1/2 cup
- cashews - 1/4 cup
- Heat pan, add sugar and 2 tbsp water, let it caramalize.
- Add cashews, pour into tray, let it cool then coarsely grind
Preparation
- In a bowl add corn flour, milk powder & 1/4 cup milk mix well without lumps
- Add corn flour mixture stir well without lumps then cook for 5 min
- Boil 1/2 ltr milk in a pan, add sugar, condensed milk cook till it thickens
- Finally add vanilla essence, cut off heat then let it cool
- Add butterscotch sauce mix well
- Add praline[Crushed chikki].
- Pour this mixture into a air-tight container and freeze it for 8 hours or overnight
- Once its ready, serve immediately

Butterscotch ice cream
For butterscotch sauce add sugar
Add 2 tbsp water
Let it caramalize
Mix gently on low flame
Sugar dissolved and caramalized
Add butter
Mix well
Add fresh cream
Mix well for a min
Butterscotch sauce ready
Pour butterscotch sauce to a bowl, keep it aside
BOil milk
Stir well, let it boil
In a bowl add milk powder, corn flour
Add milk mix well without lumps
Add corn flour, milk powder mixture
Add condensed milk
Add sugar, let it boil till it thickens
Add 1 tsp vanilla essence, cut of heat, let it cool
For instant Praline:-Crush peanut chikki
Add fresh cream
Stirr well
add butterscotch sauce
Pour mixture into airtight container
Add crushed peanuts
Add butterscotch sauce
Add peanut chikki crumbles
Freese it till set
8 hours later
