Blueberry shrikhand

Ingredients
- Hung curd [yogurt] - 1 cup [chilled]
- Blueberry cranberry jam – 3 tbsp
- Brown sugar – 3 tbsp
- Cardamom powder – ½ tbsp
- Ghee roasted pistachio - 5
- Mint leaves - 1 [for garnish]
Method
- In a bowl add hung curd beat well till creamy consistency.
- Add blueberry jam, sugar & cardamom powder mix well.
- Garnish with pistachios, mint leaves & serve immediately.
Tips & Notes
- Curd should be fresh without sour in taste.
- For home made hung curd:- Put fresh curd in a cotton cloth squeeze gently & leave it in a strainer for 30 min.
- Then place this in a wide bowl along with strainer keep it in a refrigerator for 8 hours or overnight.
- After 8 hours remove from cloth & beat well you can get thick creamy hung curd.
- Use strained hung curd water for making chapati dough
- You can make variation with saffron, mango & strawberry.
- You can use fresh fruits
