Beans thoran-Kerala style stir fry-Onam special recipe

Ingredients
- Beans – 1 cup [finely chopped]
- Dry red chilli -1
- Green chilli - 2
- Onion – 1 [chopped]
- Curry leaves – 1 spring
- Turmeric powder – ¼ tsp
- Urad dal – 1 tbsp
- Mustard seeds – 1 tbsp
- Asafetida a pinch
- Salt to taste
- Coconut oil – 1 ½ tbsp
- Water as needed
For grinding
- Cumin seeds – ½ tbsp
- Green chilli – 1
- Coconut – ½ cup [grated]
- Water as needed
Preparation
- Put coconut, cumin seeds, green chilli & water in a mixer jar & grind to fine paste.
- Heat coconut oil in a pan, add mustard seeds & let it splutter. Then add urad dal saute gently.
- Add green chilli, dry red chilli, curry leaves & asafetida sauté.
- Add onion sauté till soft. Then add beans, salt, & turmeric powder sauté for 1 min.
- Then add water, cover it & cook for 3 min. Then add ground mixture mix well & cook till soft.
- Once cooked then cut off heat, serve hot with rice.
Heat coconut oil, fry mustard seeds, urad dal till light brown
