Aloo palak paratha | Potato stuffed spinach paratha-Step by step photos & video

Ingredients

  • Aloo [Potato] –4 [boiled]
  • Onion [pyaz]– 1 [finely chopped]
  • Ginger & Garlic –1 tbsp
  • Green chilli – 1 [finely chopped]
  • Coriander leaves – 2 springs [finely chopped]
  • Dry mango powder - 1/2 tsp
  • Red chilli powder – 1 tsp
  • Turmeric powder – ¼ tsp
  • Garam masala powder – ½ tsp
  • Cumin seeds – 1 tsp
  • Oil – 1 tbsp
  • Salt to taste

For dough

  • Wheat flour – 2 cups
  • Spinach- 1 cup
  • Salt to taste
  • Oil –2 tbsp
  • Water as needed

Method

  • In a bowl add wheat flour, spinach puree, salt & add 2 tbsp oil mix well.
  • Then add water Knead it and make soft dough. Cover it & leave it for 15 min.
  • Heat oil in a pan add cumin seeds, onion, ginger, garlic, green chilli & coriander leaves sauté.
  • Then add potato mixture, salt, red chilli powder, turmeric powder, garam masala powder, dry mango powder mix well and cut off heat.
  • Divide the dough into equal size balls. Then roll out into thick chapatti
  • Add potato mixture, close the edges again & shape into a ball again.
  • Sprinkle flour then roll out each ball in to 6 to 7 inch circle shape paratha.
  • Heat iron dosa tawa then place stuffed paratha, add 1 tbsp oil or ghee
  • Turnover and cook another side till fluffy
  • Cook till both sides are golden brown
  • Then cut off heat serve hot with pickle, raitha or cucumber.
