Aloo palak paratha | Potato stuffed spinach paratha-Step by step photos & video

Ingredients
- Aloo [Potato] –4 [boiled]
- Onion [pyaz]– 1 [finely chopped]
- Ginger & Garlic –1 tbsp
- Green chilli – 1 [finely chopped]
- Coriander leaves – 2 springs [finely chopped]
- Dry mango powder - 1/2 tsp
- Red chilli powder – 1 tsp
- Turmeric powder – ¼ tsp
- Garam masala powder – ½ tsp
- Cumin seeds – 1 tsp
- Oil – 1 tbsp
- Salt to taste
For dough
- Wheat flour – 2 cups
- Spinach- 1 cup
- Salt to taste
- Oil –2 tbsp
- Water as needed
Method
- In a bowl add wheat flour, spinach puree, salt & add 2 tbsp oil mix well.
- Then add water Knead it and make soft dough. Cover it & leave it for 15 min.
- Heat oil in a pan add cumin seeds, onion, ginger, garlic, green chilli & coriander leaves sauté.
- Then add potato mixture, salt, red chilli powder, turmeric powder, garam masala powder, dry mango powder mix well and cut off heat.
- Divide the dough into equal size balls. Then roll out into thick chapatti
- Add potato mixture, close the edges again & shape into a ball again.
- Sprinkle flour then roll out each ball in to 6 to 7 inch circle shape paratha.
- Heat iron dosa tawa then place stuffed paratha, add 1 tbsp oil or ghee
- Turnover and cook another side till fluffy
- Cook till both sides are golden brown
- Then cut off heat serve hot with pickle, raitha or cucumber.

In a mixie jar, add spinach, finely grind with 1/4 cup water
Spinach puree ready
In a bowl add 2 cups wheat flour
Add salt, 2 tbsp oil
Add spinach puree, make soft dough
SPianch dough ready
For potato masala :- Add oil, cumin, onon, ginger, garlic, green chilli, turmeric, red chilli, garam masala, salt, coriander
Add boiled potato, dry mango powder
Mash well
Sprinkle flour
Roll out into thick circle
Place potato masala
Close edges
Sprinkle flour
Roll out into thic or thin paratha
Now its ready
Heat iron dosa tawa, palce stuffed paratha
Cook till golden brown spots appears or fluffy
Cook both sides
Now its ready, remove it from tawa
Serve hot with bread manchurian
