Wheat flour malpua-with rabri-How to make-Step by step photos

Main Ingredients
- Wheat flour –1/2 cup
- Milk powder - 1 tbsp
- Rava[semolina] – 1 tbsp
- Crushed fennel seeds - 1 tsp
- Cardamom powder -1 1/2 tbsp
- Water as needed
- Salt a pinch
- Oil for deep frying
Ingredients for sugar syrup
- Sugar - 1 cup
- Water - 3/4 cup
- Cardamom powder - 1 tbsp
Ingredients for rabri
- Milk–2 cups
- Sugar - 4 tbsp
- Cardamom powder – 1 tbsp
- Saffron - 1 tsp
- Almonds and pistachios - 3 tbsp
- For preparing rabri:-
- Boil milk in a broad pan, collect malai[paal adai] and place it on the side of the pan & let it reduced to half.
- Once milk reduced to half & thickenes then add saffron and cardamom powder
- Add pistachios and almonds cut off heat.
- Remove malai from the pan.
- Pour rabri and malai in a bowl, refrigerate for 2 hours
Method
- In a bowl add wheat flour, milk powder, rava,salt, cardamom & fennel powder mix well
- Add water/milk mix well without lumps then leave it for 10 min.
- Heat enough oil in a pan, pour 1 ladle of batter, deep fry till golden brown.
- Drain on absorbent paper.
- For sugar syrup:- Heat pan add sugar & water, let it melt then boil the sugar syrup till sticky consistency or 1 string consistency
- Add cardamom powder, 1 tbsp ghee cut off heat.
- Dip each malpua in the prepared sugar syrup then palce it on the plate.
- Pour chilled rabri over the malpua serve immediately
How to make Wheat flour malpua - Step by Step Photos
In a bowl add wheat flour, milk powder
Add rava
Add salt
Add fennel & cardamom powder
Add water, mix well without lumps
Batter is ready, cover it & leave it for 10 min
After 10 min
Heat oil, pour batter
Deep fry till golden brown
Deep fry on medium flame
Flip over fry both sides
Now its ready
Now its ready, remove it from oil, drain on absorbent paper
Heat sugar and water, let it melt & boil till sticky consistency
Add cardamom powder
Now its ready, cut off heat, keep it aside
Dip malpua in sugar syrup
Sugar syrup malpuas ready
For rabri:-boil milk
Collect malai
Add sugar, let it boil till it thickens
Add saffron
Add cardamom powder
Now its ready, cut off heat
Refrigerate for 2 hours
Pour rabri over the malpua, serve immediately
