Vegetable Aval Upma | Vegetable poha upma | Vegetable poha recipe

Ingredients
- Aval [poha or Flattened rice] – 1 cup
- Onion – 1 [sliced or chopped]
- Carrot – ½ cup [finely chopped]
- Capsicum – ¼ cup [finely chopped]
- Tomato – 1 [finely chopped]
- Coconut – ¼ cup [grated] [Optional]
- Green chilli – 1 [slit or chopped]
- Ginger – 1 tbsp [finely chopped]
- Coriander leaves – 2 springs [chopped]
- Curry leaves – 1 spring
- Mustard seeds – 1 tbsp
- Cumin seeds – ½ tbsp
- Bengal gram – 1 tbsp
- Urad dal – 1 tbsp
- Oil – 2 tbsp
- Salt to taste
- Water as needed
Method
- Wash smooth poha and drain water. Don’t soak poha. For thick poha soak in water for a min.
- Heat oil in a pan then add mustard seed & let it splutter. Add Bengal gram, urad dal & cumin seeds.
- Then add onion sauté well then add ginger, green chilli & curry leaves.
- Add carrot & capsicum sauté. Then add tomato, turmeric & red chilli powder sauté.
- Add grated coconut sauté gently. Add poha and salt then mix well.
- Add chopped coriander leaves. Cut off heat and serve hot with pickle, coconut chutney.
Tip
- You can add roasted or fried nuts, beans, green peas etc.
