Ingredients
- Jackfruit seeds [Palakottai-in tamil, kathal-in Hindi] - 1 cup [fresh]
- Garlic - 3 cloves [mashed]
- Curry leaves – 1 spring
- Tumeric powder – 1 tsp
- Red chilli powder – 1 tbsp
- Garam masala powder- 1 tbsp
- Coriander leaves - 2 springs
- Mustard seeds – 1 tbsp
- Asafetida[Hing]-½ tsp
- Salt to taste
- Oil – 2 tbsp
Preparation Method
- Wash & boil jackfruit seeds with turmeric powder & red chilli powder till soft.
- Peel off the jackfruit skin & cut into half
- Heat oil in a pan add mustard seeds let it splutter then add garlic, curry leaves & asafetida.
- Add red chilli powder & turmeric powder
- Add jackfruit seeds, salt & garam masala powder saute for 3 min.
- Finally add coriander leaves, mix well then cut off heat
- Then serve hot with rice

Wash jackfruit seeds
Boil with turmeric powder & red chilli powder till soft
Now its ready, peel off the skin
Cut into half
Heat oil, add mustard, garlic & curry leaves
Add turmeric, red chilli powder, asafoetida, jackfruit seed, salt & garam masala saute
Add coriander leaves,mix well, cut off heat
Jackfruit seeds roast ready, serve hot with rice
