Ingredients
- Jackfruit seeds [Palakottai-in tamil, kathal-in Hindi] - 1 cup [fresh]
- Sambar onion - 5
- Garlic - 4 cloves [mashed]
- Ginger - 1 tbsp [mashed]
- Green chilli - 1
- Curry leaves – 1 spring
- Tumeric powder – 1 tsp
- Red chilli powder – 1 tbsp
- Peppercorns - 1 tsp
- Cumin seeds - 1 tbsp
- Coriander leaves - 2 springs
- Mustard seeds – 1 tbsp
- Fennel seeds - 1 tbsp
- Cinnamon stick-1/2
- Salt to taste
- Oil – 2 tbsp
Preparation Method
- Wash & boil jackfruit seeds with turmeric powder, r ed chilli powder & 1/2 tbsp ginger paste till soft.
- Peel off the jackfruit skin & cut into stripes.
- Roast cumin & pepper, coarsely grind then keep it aside
- Heat oil in a pan add mustard seeds let it splutter then add cumin seeds, cinnamon, fennel seeds, ginger, garlic, green chilli & curry leaves fry.
- Add small onion saute till light brown.
- Add jackfruit seeds, salt & cumin pepper powder saute for 3 min.
- Finally add coriander leaves, mix well then cut off heat
- Then serve hot with rice

Wash & boil jackfruit seeds with turmeric powder, red chilli powder & ginger paste
Then peel off & cut into stripes
Heat oil, add mustard, fennel, cumin, cinnamon, curry leaves, onion, ginger garlic & green chilli saute
Add jackfruits seeds roast
Add salt mix well
Add cumin & pepper powder mix well
Finally add coriander leaves, cut off heat
Jackfruit seeds masala roast ready
