Grated Cucumber raita | Vellarikka pachadi recipe

Ingredients
- Cucumber - 1
- Ginger – 1 tbsp [finely chopped]
- Green chilli – 1 [chopped]
- Coriander leaves – 3 springs [chopped]
- Curry leaves – 1 spring [chopped]
- Lemon juice – ½ tbsp
- Salt to taste
- Curd – ¾ cup
Seasoning / Tempering ingredients [optional]
- Mustard seeds – ½ tbsp
- Curry leaves – 1 spring
- Oil – 1 tbsp
Method
- Peel off the cucumber skin then remove seeds & grate.
- Then put grated cucumber in a cotton cloth squeeze extra water.
- In a bowl add cucumber, curd & salt mix well
- Then add lemon juice mix well
- Heat pan, add oil then add mustard let it splutter.
- Then add ginger, green chilli, curry leaves,& coriander leaves
- Finally add seasoned ingredients to cucumber curd mixture & serve.
