Ingredients
- Capsicum
- Oil - 1 tbsp
- Butter or ghee– 2 tbsp
- Cumin seeds - 1 tbsp
- Bay leaf - 1
- cinnamon - 1
- cardamom - 2
- Kasoori methi - 1 tbsp
- corainder leaves - 2 tbsp
- red chilli powder - 1 tsp
- Turmeric - 1/2 tsp
- Garam masala - 1 tbsp
- Green chilli - 1
- Water as needed
Ingredients for basic gravy
- Onion - 1
- Ginger - 1 inch piece
- Garlic - 4 cloves
- Dry red chilli -2
- Cashews - 2 tbsp
- Tomato - 4
- Heat 1 tbsp oil, add all ingredients, grind to smooth puree
Method
- Heat pan add capscium, salt, turmeric, red chilli powder, salt, garam masala, roast for 3 min
- Heat Oil and butter in a pan, add cinnamon stick, green chilli, bay leaves, & green cardamom.
- Add ground puree, turmeric, red chilli, garam msala , mix well, let it boil for 5 min
- Add salt let it boil
- Add sauted capsicum, kasoori methi, boil for another 3 min
- Garnish with butter and serve hot with rice, chapati, naan, idly or dosa.

Capscium masala
Heat 2 tbsp oil
Add onion, ginger, garlic, dry red chilli, cashews
Roast for 2 min
Add salt
Add tomato saute till soft
Add water, cook for 5 min
In a mixie jar add raosted ingredients, grind to fine paste
Ground puree ready
Heat same pan, add 1 tbsp oil, capsicum, salt
Add red chilli powder, garam masala and salt
Roast for 2 min
Roasted capscium ready
Heat pan, add 1 tbsp oil and 1 tbsp ghee or butter, cumin, bay leaf, cardamom, cinnamon
Add groudn puree
Add red chilli, garam masala
ADd turmeric & salt, boil for 5 to 8 min
Add kasoori methi [dried fenugreek]
Boil for 5 min
Add roasted capscium
Add coriander leaves, cut off heat
Transfer to a bowl
Serve hot with chapathi
Perfect & rich gravy
