Potato eggplant masala | Aloo baingan for poori or roti-How to make-Step by step photos

Ingredients
- Potato – 2
- Eggplant [baingan] - 2
- Tomato -1 [chopped]
- Green chilli – 1 [chopped]
- Onion – 1 [sliced]
- Ginger & Garlic paste – 1 tbsp each
- Curry leaves – 1 spring
- Coriander leaves – 1 spring
- Red chilli powder – ½ tbsp
- Turmeric powder- ¼ tsp
- Coriander powder -1 tbsp
- Mustard seed – ½ tbsp
- Cumin seeds – ½ tsp
- Bengal gram – ½ tbsp
- Urad dal – ½ tbsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Method
- Wash & boil potato, peel off & cut into cubes.
- Wash and slice eggplant.
- Heat pan with oil add mustard seeds, cumin seed, Bengal gram and urad dal.
- Add onion sauté well then add ginger and garlic paste.
- Add green chilli, curry leaves and tomato sauté well.
- Add eggplant, red chilli powder, turmeric powder, & coriander powder saute for 5 min.
- Then add Potato saute for 3 min then add water cook till soft
- Once its ready add salt mix well then cut off heat.
- Sprinkle coriander leaves serve hot with poori or chapatti

Heat oil, add mustard, chana dal, urad dal, onion, garlic, green chilli, curry leaves, tomato, eggplant saute till soft
Add boiled & cubed potato
Add salt, saute for 3 min
Add water, cook till soft
Now its ready, cut off heat
