How to make Yellow pumpkin jaggery halwa video
Ingredients
- Yellow pumpkin [Parangikai, kaddu]-1 cup
- Jaggery-3/4 cup
- Water-1/4 cup
- Cardamom powder-1/2 tbsp
- Almond, raisins - 2 tbsp
- Ghee-4 tbsp
Preparation
- Wash and remove yellow pumpkin skin
- Finely grate yellow pumpkin then keep aside.
- Heat 1 tbsp ghee in a pan, add grated pumpkin, saute for 5 min
- Heat another pan, add jaggery & water, let it dissolvd first then boil for 3 min.
- Strain & pour jaggery syrup over the sauted pumpkin, stir continuously till it thickens or the mixture starts leaving the pan
- Once the mixture ready, then add cardamom powder & roasted nuts.
- Garnish with dry fruits server cold / warm / hot
Note
- You can mix water with milk in equal proportion and prepare
Tip
- You can add coconut milk / coconut cream
- You can add khoya or palkhova.
- You can add condensed milk
- For Instant pumpkin halwa use condensed milk and khoya, Khoa.
How to make Yellow pumpkin jaggery halwa-Step by step photos
Take 1/4 fruit yellow pumpkin
Remove skin
Finely grate
Heat ghee, add grated yellow pumpkin
Saute for 5 min or till soft
Heat pan, add jaggery
Add water
Boil for 3 min
Strain without impurities
Stir well
Cook for 5 min
Add ghee, cook till it thickens
Add cardamom powder
Stir for 3 min
Add almonds & raisins
Now its ready, cut off heat
Garnish with nuts, store in an airtight container, use within 1 week
