Instant cucumber dosa [Vellarikai dosai] is simple, 2 ingredient, karnatka style breakfast recipe. No fermentation required. If you want fermented batter, you can leave it for overnight for fermentation. In karnataka only raw rice & cucumber is used in this recipe. But we added few ingredients[Like green chilli, ginger & cumin seeds ] for flavour. No water required. No grinder required. We can add grated coconut for neer dosa flavour. Super crispy dosa without urad dal. This is best for summer season. Onion tamatind chutney is best combination. Best recipe for bachelors. This is authentic Thulu style breakfast/dinner.
Ingredients
- Raw Rice[Pacharisi]-1 cup [250 gram]
- Cucumber - 1
- Green chilli - 1
- Cumin seeds - 1 tbsp
- Ginger - 1 inch piece or 1 tbsp
- Salt to taste
- Oil - 2 tbsp
Preparation method
- Wash and soak raw rice for 5 hours
- Peel off cucumber then chop
- In a mixie jar add soaked raw rice, cucumber, salt, green chilli, cumin seeds, and ginger finely grind
- Add water if required
- Transfer mixture to a bowl, cover it, leave it for fermentation [Apr 8 hours]
- Heat iron dosa tawa, pour batter, drizzle 1 tbsp oil around the dosa, cook till crips and golden brown.
- Once its ready, serve hot with chutney or sambar

Perfect, crispy cucumber paper roast dosa
In a bowl add raw rice [Pacharisi]
Was hand soak it for 5 hours
5 hours later, drain water.
Wash and peel off cucumber skin
Roughly chop
In a mixie jar add cucumber, green chilli
Add soaked rice, ginger
Add cumin seeds, finely grind
Pour into mixture jar
Add salt
Mix well, leave it for fermentation
Fermented batter ready
Heat iron dosa tawa, pour batter, evenly spread
Pour 1 tbsp oil around the dosa
Cook for 2 min
Crispy cucumber dosa ready
Fold
Serve hot with onion chutney
