Eggless mango cake-No oven-Pressure cooker method-How to make-Step by step photos

Ingredients
- Maida /All purpose flor / Wheat flour- 2 cups
- Mango puree- 3/4 cup
- Milk- 200 ml
- Condensed milk- 1/4 cup
- Curd- 1/4 cup
- Coconut oil- 1/4 cup
- Salt- 1/4 tsp
- Baking powder - 1/2 tsp
- Baking soda - 1 tsp
- Melted Butter - 1/4 cup
- Sugar - 1 cup
- Milk - 1 cup
- Vanilla essence - 1 tsp
- Cardamom powder- 1 tsp
Preparation
- Take 5 littre pressure cooker.
- Add 2 cups of sand / sea salt.
- Then place grid.
- Pre-heat for 15 min on low flame
- Remove gasket & whistle from the pressure cooker lid.
- In a bowl seive maida, salt, baking powder, baking soda mix well.
- Boil milk, add butter melt and cut off heat, let it cool then add coconut oil mix well
- In a mixer jar add mango, condensed milk, sugar & curd grind to fine puree
- Add butter & milk mixture to dry ingredients mix well
- Add ground mango puree, cardamom powder, vanilla essence mix well.
- Grease baking tray with butter and sprinkle flour.
- Pour prepared mango cake mixture to the baking tray.
- Place it on pressure cooker grind.
- Close lid & cook for 45 min on low to medium flame.
- Once its ready carefully remove baking tray then un-mould & let it cool.
- Pour chocolate glaze and sprinkle grated white chocolate over the cake and serve immediately
Note
- Before baking in pressure cooker remove gasket & whistle.

In a mixer jar add mango and sugar, finely grind
Add sweet condensed milk
Add curd, grind to smooth puree
Now its ready, keep it aside
Seive wheat flour and baking powder
Add salt
Boil milk
Add butter, melt then cut off heat
Add coconut oil
Add vanilla
Add wet ingredients
Mix well
Add mango mixture
Add turmeric and cardamom powder, mix well
Transfer mango cake batter to a bowl
Place it in pressure cooker, bake it for 45 to 50 min on low flame
After 45 min, remove it from pressure cooker
Remove it from bowl
Super soft mango cake ready
