Simple curd rice | Thayir sadam for lunch | Rice bagalabath-How to make-Step by step photos

Boil rice, add salt, mash well. Add boiled milk mix well let it 3/4 th cool. Add Curd mix well when it is warm. Heat oil, add mustard seeds, curry leaves, ginger and green chilli saute. Add seasoned ingredients to the rice mixture mix well.
Ingredients
- Rice [Sona masoori rice, kolam rice] - 1 cup
- Water – 2 ½ cups
- Milk – ½ cup
- Curd- 4 tbsp
- Salt to taste
Tempering / Seasoning ingredients
- Mustard seeds – 1 tbsp
- Curry leaves – 1 spring
- Green chilli – 1 [finely chop]
- Ginger – 1 tbsp [finely chopped]
- Coriander leaves – 2 springs [finely chopped]
- Asafoetida a pinch
- Oil – 1 tbsp
Preparation
- Wash & soak rice for 15 min.
- Boil in a pressure cooker for 4 whistles.
- In a bowl add boiled rice & salt mash well & keep it aside till warm.
- Add curd mix well
- Add oil in a pan add mustard let it crackle, then add ginger, green chilli, asafoetida, & curry leaves fry
- Add seasoned ingredients to the curd rice.
- Finally add chopped coriander leaves mix well & cover it & leave it for 4 hours.
- Serve with any pickle or chips
Note
- Use fresh curd.
- Dont add curd in hot rice
Tip
- Pomegranate seeds, mango, pineapple, carrots, roasted cashews, raisins and grapes can be added.
- For variations of bagalabath:- You can make vermicelli/semiya bagalabath, aval bagalabath, sago bagalabath, rava bagalabath, broken wheat bagalabath, rago semiya bagalabath, oats bagalabath

Cook rice then mash well
Boil milk

Mix & mash well with ladle
Add salt
Heat 2 tbsp oil, add mustard, let it crackle
Add asafetida [perungayam]
Add ginger, green chilli & curry leaves
Add seasoned ingredients
Add chopped coriander leaves
Add curd in warm stage of rice
Add enough curd mix well
Mix curd and rice well
