Cucumber curd rice | Vellarika Thayir Sadam

Ingredients
- Rice - 1 cup
- Yogurt (Curd) - 1 1/2 cups
- Pomegranate seeds - 3 tbsp
- Green Chilies - 2
- Dry red chilli - 1
- Ginger - 1 tbsp[Finely chopped ]
- Mustard Seeds - 1 tbsp
- Coriander Leaves - 1 spring[Finely chopped ]
- Curry leaves - 1 spring
- Salt to taste
- Asafoetida - A pinch
- Oil - 1 1/2 tbsp
Preparation
- Boil rice, let it cool.
- Then add salt & curd mix well.
- Heat oil in a pan add mustard seeds let it splutter.
- Then add curry leaves, ginger, dry red chilli, green chilli & asafetida mix well
- Add seasoned ingredients to the curd rice.
- Add cucumber, pomegranate seeds, & coriander.
- Serve with pickle
Note
- Use fresh curd.
Tip
- You can add Mango, Carrot, grapes & cashews.
