Rice pakora with leftover rice

Ingredients

  • Leftover rice [Boiled rice]– 1 cup
  • Gram flour 2 tbsp
  • Corn flour – 2 tbsp
  • Onion – 1 [finely chopped]
  • Garlic – 2 cloves [mashed]
  • Green chilli – 1 [remove seeds, striped]
  • Carrot – 1 [grated]
  • Potato – 1 [cut into thin strips]
  • Red chilli powder - ½ tsp
  • Turmeric powder – ¼ tsp
  • Curry leaves – 2 springs [chopped]
  • Coriander leaves – 2 springs [chopped]
  • Salt to taste
  • Oil for deep frying
  • Water as needed [3 to 4 tbsp]

Preparation

  • In a bowl add leftover rice &salt mix well
  • Then add gram flour, corn flour, red chilli & turmeric powder mix well
  • Add onion, green chilli, garlic, carrot, potato, curry leaves, coriander leaves & 4 tbsp of water mix well
  • Heat oil in a pan, sprinkle rice mixture, deep fry till crisp & golden brown on medium hot oil.
  • Once its ready remove from oil & drain on absorbent paper.
  • Serve hot with curd rice, evening snack, tea or coffee
