Aloo matar puri masala

Ingredients

  • Aloo [Potato] – 2 [boiled, cut into cubes]
  • Green peas [Matar] – 1 cup [boiled]
  • Tomato -1 [chopped]
  • Onion – 1 [sliced]
  • Green chilli – 1 or 2
  • Ginger & garlic – 1 tbsp [Each, chopped]
  • Curry leaves – 1 spring
  • Coriander leaves – 2 springs [chopped]
  • Turmeric powder - ¼ tsp
  • Red chilli powder – ½ tsp
  • Coriander powder – 1 tsp [dry roast coriander seeds & grind to fine powder]
  • Mustard seeds – 1 tbsp
  • Cumin seeds – 1 tsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Salt to taste
  • Oil - 2 tbsp
  • Water as needed

Method

  • Heat oil in a pan; add mustard seed & let it splutter. Then add cumin seed, Bengal gram and urad dal.
  • Add onion sauté till soft then add ginger and garlic.
  • Add green chilli, curry leaves and tomato sauté till soft.
  • Add red chilli powder, turmeric powder, and potato mix well. Then add ½ cup of water mix well.
  • Then add boiled green peas & coriander powder mix well & let it boil.
  • Finally add salt mix well then cut off heat. Sprinkle coriander leaves, serve hot with poori.
