Gujarati potatoes recipe

Ingredients For Koftas

  • Baby potatoes – ¼ kg
  • Cumin powder – 1 tbsp [dry roast cumin seed then grid]
  • Coriander powder -1 tbsp [dry roast coriander seed then grid]
  • Red chilli powder – 1 tbsp
  • Turmeric powder – ¼ tsp
  • Mustard seeds – 1 tbsp
  • Cumin seeds – ½ tbsp
  • Fenugreek – ¼ tsp
  • Curry leaves – 1 spring
  • Grated coconut – 3 tbsp
  • Coriander leaves – 2 springs
  • Green chilli – 1 [chopped]
  • Salt to taste
  • Oil – 2 tbsp

Method for curry

  • Boil baby potatoes. Peel the skin off and marinate with salt, turmeric and red chilli powder.
  • Heat oil in a pan then add mustard seeds. Once it’s spluttered then add cumin seeds, fenugreek, green chilli and curry leaves.
  • Add grated coconut, cumin powder and coriander powder mix well.
  • Add potatoes mix well. Then add chopped coriander leaves cut off heat. Serve hot with rice, chapathi.
