Cauliflower masala varuval


Cuisine Style: Erode, Tirupur, Coimbatore, South India | Cooking Time: 15 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Dry curry, varuval.

Ingredients

  • Cauliflower – 1 cup
  • Onion – 1 [chopped]
  • Green chilli – 1 [chopped]
  • Ginger – ½ tbsp [finely chopped]
  • Garlic -½ tbsp [finely chopped]
  • Curry leaves – 1 spring
  • Coriander leaves – 1 spring
  • Turmeric powder – ¼ tsp
  • Red chilli powder – ½ tsp
  • Bay leaves – 1
  • Star anise – ¼ flower
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

For Roasting and grinding ingredients

  • Cinnamon stick – 1 inch
  • Fennel seeds – ½ tbsp
  • Cloves – 2
  • Peppercorns – 5
  • Cumin seeds – 1 tbsp
  • Coriander seeds – 1 tbsp
  • Poppy seeds – ½ tsp
  • Coconut – 2 tbsp [grated]
  • Dry red chilli – 1
  • Garlic – 2
  • Ginger – ½ inch [chopped]
  • Curry leaves – 1 spring
  • Urad dal – ½ tbsp
  • Bengal gram – ½ tbsp
  • Tomato – 1
  • Oil – 2 tbsp
  • Heat oil in a pan then roast all ingredients & grind to fine paste with ¼ cup of water.

Method

  • Break the whole cauliflower into medium florets.
  • Take a bowl, pour warm water & add salt & turmeric powder mix well then put cauliflower & leave it for 5 min then drain water.
  • Heat oil in a pan then add Bay leaves, Star anise saute
  • Then curry leaves, onion garlic, ginger and green chilli sauté well.
  • Add cauliflowers, turmeric & red chilli powder mix well & cook for 3 min.
  • Then add ground paste and salt mix well & let it cook for another 2 min.
  • Finally add coriander leaves cut off heat & serve hot.
