Southekayi sambar [Mangalore cucumber]-How to make step by step photos & video

Cuisine Style: Tamil Nadu, South India | Cooking Time: 10 minutes | To Serve: 4 | Take with: Idli, Dosa, Rice, Chapathi | Type : Sambar, Gravy, kulambu, curry, masala.
Ingredients
- Southekayi [Mangalore cucumber, madras cucumber]– 1 cup
- Toor dal – ¼ cup
- Tamarind water – 1/4 cup [soak 1 inch size tamarind in warm water, squeeze &extract water]
- Tomato – 1 [chopped]
- Onion [Shallots] - 7
- Green chilli – 1 [slit]
- Garlic – 3 cloves
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Turmeric powder – ¼ tsp
- Red chilli powder – ½ tsp
- Mustard seeds – 1 tbsp
- Chana dal - 1 tbsp
- Urad dal - 1 tbsp
- Asafetida a pinch
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Ingredients for roasting & grinding
- Chana dal - 1 tbsp
- Urad dal - 1 tbsp
- Coriander seeds - 1 tbsp
- Cumin seeds- 1 tbsp
- Peppercorns - 1 tsp
- Dry red chilli - 2
- Coconut - 2 tbsp
- Oil – 2 tbsp
- Water - 1/2 glass
- Heat 1 tbsp oil in a pan, add all above ingredients, roast till light brown
- Then grind to fien paste with 1/2 glass of water
Method
- Wash toor dal 2 to 3 times. Then put it in a pressure cooker, add turmeric, sesame oil, cook for 3 to 4 whisltes
- Wash & remove mangalore cucumber skin & seeds. then cut into cubes
- Heat 2 tbsp oil in a pan add mustard, chana dal, & urad dal fry for a min.
- Add onion, garlic, asafoetida, green chilli & curry leaves saute
- Add fenugreek powder saute for a min
- Add turmeric, red chilli powder, tomato, mangalore cucumber, mix well
- Add water, cook till soft
- Add pressure cooked toor dal & salt mix well
- Add ground mixture & tamarind water, cook for 5 min
- Add jaggery powder cook for 2min
- Add coriander leaves, cut off heat
- Then serve hot with rice, idli or dosa.

Perfect southekayi sambar
Take 1/2 southekayi
Remove seeds & skin
Cut into cubes
Dry roast fenugreek seeds
Put it in a stone mortar, coarsely grind
Fenugreek powder ready or you can use store bought fenugreek powder
Add chana dal, urad dal, coriander, cumin, pepper, dry red chilli, 1 tbsp oil roast
Add 2 tbsp coconut roast till light brown
Put it in a mixie jar, grind to fine paste
Now its ready, keep it aside
Wash toor dal 2 to 3 times. Then put it in a pressure cooker
Add turmeric
Add 1 tbsp sesame oil
Cook for 3 to 4 whisltes
Add 2 tbsp oil add mustard, chana dal, urad dal hing, green chilli & curry leaves fry for a min.
Add onion, garlic saute till soft
add salt
Add fenugreek powder
Add tomato saute till soft
Add mangalore cucumber, turmeric & red chilli powder, saute for 3 min
Add water, cook till soft
Apr [8 min] for boiling time
Add cooked toor dal
add ground mixture
Boil for 3 min
Add tamarind water, boil for 5 min
Add jaggery
Add coriander leaves, cut off heat
