Tamatar sev curry | sev tameta nu shaak-How to make-Step by step photos

Ingredients for seasoning
- Sev- 1/4 cup
- Onion – 1 [sliced]
- Ginger– 1 tbsp
- Garlic – 1 tbsp
- Green chilli – 1 or 2
- Tomato - 2 [finely hopped]
- Curry leaves – 1 spring
- Coriander leaves – 2 springs [chopped]
- Mustard seeds – 1 tbsp
- Cumin seeds – 1 tbsp
- Red chilli powder – 1/2 tbsp
- Turmeric powder – 1/4 tsp
- Coriander powder - 1 tsp
- Garam masala powder – 1 tsp
- Hing– 1/4 tsp
- Salt to taste
- Oil – 2 tbsp
- Water as needed
Method
- Heat oil in a pan add mustard seeds, cumin seeds & let it splutter.
- Then add hing, curry leaves, onion, green chilli, ginger & garlic sauté till soft.
- Add turmeric powder, red chilli powder, coriander powder, garam masala powder mix well.
- Add chopped tomato saute till soft.
- Add water, let it boil for 5 min or boil till raw smell out. [Add water if required]
- Once its ready, add coriander leaves, cut off heat.
- Add sev & serve hot with chapathi or rice
Not and tips
- You can add lemon juice or sugar to balance the flavour
- You can add chickpea flour / corn flour for thickness
- For another variation You can add boiled potato & tomato puree
- You can add spianch puree & cashewnut paste
