Ellu Seedai [Sesame jaggery balls]

Ingredients

  • Rice  - 1 cup
  • Jaggery – ¾ cup
  • Green cardamom powder  - ½ tbsp
  • Roasted sesame seeds – 2 tbsp

Preparation

  • Soak rice for 3 hours. Wash and drain extra water. Grind to nice
  • Heat pan with 1 tbsp water then add jaggery mix well. Once jaggery is melted cut of heat
  • Add melted jaggery to rice flour & mix well.
  • Add roasted sesame seeds and mix well
  • Grease your palm with oil & roll to ball shape and deep fry till golden brown in medium flame

Must see Note

  • Take a pinch of melted jaggery and put into water. If it is not dissolved then it is in right consistency else heat the jaggery for some more time repeat the test.
  • Before fry balls gently press middle of each balls else it would crack when frying.
  • For sugar seedai we use sugar syrup in rice flour mixture.

Tip

  • If the dough is too soft and unable to get the right shape then mix rice flour.
  • If the dough is too soft hard then add some boiled milk & mix well.
