Grated Cucumber raita or Vellarikka pachadi recipe

Ingredients

  • Cucumber - 1
  • Ginger – 1 tbsp [finely chopped]
  • Green chilli – 1 [chopped]
  • Coriander leaves – 3 springs [chopped]
  • Curry leaves – 1 spring [chopped]
  • Lemon juice – ½ tbsp
  • Salt to taste
  • Curd – ¾ cup

Seasoning / Tempering ingredients [optional]

  • Mustard seeds – ½ tbsp
  • Curry leaves – 1 spring
  • Oil – 1 tbsp

Method

  • Peel off the cucumber skin then remove seeds & grate.
  • In a bowl add grated cucumber, salt & leave it for 2 min. Then gently squeeze out the extra water.
  • Add ginger, green chilli, curry leaves, coriander leaves, salt & lemon juice mix well. Then add curd mix well & serve
  • Or Finally add tempering ingredients & serve.
