Spring onion kuzhi paniyaram By

Ingredients

  • Paniyaram batter [Idli batter] – 1 cup
  • Spring onion [Scallion, vengaya thal] – ½ cup [chopped]
  • Onion – 1 [finely chopped]
  • Curry leaves – 2 springs [finely chopped]
  • Coriander leaves – 2 springs [finely chopped]
  • Mustard seeds – 1 tbsp
  • Bengal gram – 1 tbsp
  • Urad dal – 1 tbsp
  • Salt to taste
  • Oil – 3 tbsp

Method

  • Heat oil in a pan then add mustard seeds & let it splutter. Then add Bengal gram & urad dal.
  • Add onion sauté till soft then add green chilli, spring onion & curry leaves sauté for a min.
  • Then add salt & coriander leaves mix well & cut off heat.
  • Take paniyaram batter in a bowl, add seasoned ingredients & mix well.
  • Heat paniyaram tawa (Iron casting tastes better than other material) & grease with oil then pour batter & fill the entire cavity. Cover lid and cook for 2 min.
  • Flip over and pour 1 tbsp of oil around the paniraram then again cook for 2 min.
  • Cut off heat. Then transfer to serving plate. Serve hot with coconut chutney
