Pavakkai bajji

Ingredients

  • Pavakkai [ Bitter gourd, karela ]- 1 [wash & thinly slice]
  • Besan [gram flour, kadalai maavu] – ¼ cup
  • Rice flour – 2 tbsp
  • Red chilli powder – 1 tsp
  • Turmeric powder- ¼ tsp
  • Garam masala powder - 1 tsp
  • Ginger garlic paste - 1 tbsp [optional]
  • pepper powder - ¼ tsp
  • Asafetida a pinch
  • Salt to taste
  • Water as needed
  • Oil – ¼ ltr [for frying]

Preparation

  • Peel of the bitter gourd skin, wash & thinly slice.
  • Heat 12 tbsp oil in a pan add sliced bitter gourd saute then add turmeric & red chilli powder saute.
  • Add water cook 3/4 th. Then cut off heat add lemon juice mix well & leave it for 10 min.
  • Take a bowl add gram flour, rice flour, salt, asafetida, gigner, garlic paste, garam masala, red chilli & turmeric powder then add water mix well (bajji batter consistency).
  • Heat enough oil in a pan, dip bitter gourd slices in the batter and deep fry on medium hot oil till crisp & golden brown.
  • Serve hot with Tomato sauce, Green Chutney, Schezwan chutney
