Lotus seeds tomato curry

Ingredients

  • Lotus seeds [Thamarai vidhai, Phool makhana] – 1 cup
  • Tomato – 2 [chopped]
  • Cumin seeds – 1 tbsp
  • Onion – 1 [chopped]
  • Ginger – 1 tbsp [finely chopped]
  • Garlic – 2 [finely chopped]
  • Green chilli – 1 tbsp [chopped]
  • Curry leaves – 1 spring
  • Coriander leaves – 1 spring
  • Red chilli powder – ½ tsp
  • Turmeric powder – ¼ tsp
  • Garam masala powder – ½ tsp
  • Salt to taste
  • Oil – 2 tbsp
  • Water as needed

Method

  • Heat oil in a pan add cumin seeds & let it splutter then add onion sauté till soft.
  • Add ginger & garlic sauté. Then add curry leaves sauté.
  • Add tomato sauté till soft.
  • Add turmeric powder, red chilli powder, salt & water let it boil.
  • Add lotus seeds & garam masala mix well, cover lid & let it boil.
  • Finally add coriander leaves & cut off heat then serve hot with rice, ragi dosa, idli, roti, chapathi or paratha.
