Green chilli pickle

Ingredients

  • Green chilli [Pachai Milagai-Tamil, Hari Mirch-Hindi] – 1 cup
  • Gingelly oil[Sesame oil] – 50 ml
  • Mustard seeds – 1 tbsp
  • Fenugreek – 1 ½ tbsp
  • Coriander seeds – 1 tbsp
  • Turmeric powder – ½ tbsp
  • Lemon juice – 3 tbsp
  • Asafetida – ½ tbsp
  • Sea salt as required

Marinade

  • Wash & wipe out green chilli then cut the green chilli into 1 inch pieces.
  • Take the green chilli in a large plate and add sea salt.
  • Mix well and expose to sunlight for 1 day

Seasoning & Preparation Method

  • Heat ¾ cup of sesame oil then let it cool.
  • Dry roast mustard seeds, fenugreek seeds, & coriander seeds then let it cool.
  • Then put it in a mixer jar & grind to fine powder.
  • Heat sesame oil in a pan then add mustard seeds let it splutter.
  • Add freshly ground powder, asafetida, & turmeric powder mix well.
  • Add marinated green chilli mix well then cut off heat.
  • Add lemon juice mix well.
  • Finally add sesame oil mix well.
  • Then store it in porcelain jar (Optionally pour some more gingelly oil). Serve with curd rice or upma
